These have factual standing and are based directly off of canon things.
For most opponents Gabriel exclusively uses light weapons. When someone is a worthy threat, he uses Justice and Splendor. Under circumstances of respect for an enemy, he will use Justice to deal a final blow.
According to the Sisyphus Prime Terminal Entry, Gabriel unsheathed his blade to behead Sisyphus for the first time since "time immemorial," meaning Gabriel does not use his blades on just any enemy.
Along with this, Gabriel exclusively uses light weapons for his first fight against V1. However, in the second fight, he exclusively uses his traditional blades, Justice and Splendor.
Although Gabriel was angered by his loss, he still saw V1 as a big enough threat to properly try the second time.
Our conclusion should be that Gabriel only uses his swords against worthy opponents. The second part is part of a headcanon you'll see further down.
Gabriel’s wings are depicted as birdlike. He can even molt, according to the body pillow.
On Gabriel's body pillow, you can clearly see bird feathers, insinuating he may molt.
To parallel Gabriel’s JUSTICE IS SPLENDOR motif and to represent his newer self, he often also uses the AGONY IS ECSTASY motif.
The origin of the "Ecstasy" motif. In the second phase of the Heresy encounter, the game files reveal the wing names: ecstasy.
The writing on his wings and halo is angelical, but for the sake of a written, translatable dialect, I use Enderian instead.

Gabriel has never changed nor updated his attire (or even worn another outfit), as he kept the armor and weaponry given to him by God out of strict discipline and devotion.
The Power terminal data directly cites this.
I associate him highly with roses, so they are also his favorite flower.
"Stop and smell the roses-" a figure of speech meaning to stop and enjoy things. ULTRAKILL is Gabriel learning to find enjoyment in bloodshed. Roses often represent passion, and Gabriel is finding passion/ecstasy in battle. He also has a lot more in common with other rose colors than just red (see image below).
While Gabriel was always favored by Heaven, it became much stronger after the absence of God, and he served as a stable crutch for some seven hundred years.
There isn't enough of a time period between God leaving and him becoming Judge of Hell for Gabriel to just become likeable afterwards, and the Power's terminal data directly mentions Gabriel was less active with the powers after becoming Judge of Hell.

Headcanons
These flesh out Gabriel's character a little by giving him more personality.
- Gabriel cannot see glass, but no one knows since the glass in Heaven is stained. He also cannot tell where the screens of Limbo start and end for this reason, and despises being there as he hits his face often.
- He has never drank wine, but would probably get intoxicated easily.
- Gabriel is Heaven's Brightest and has therefore never been in the dark before.
- Gabriel radiates heat at all times and cannot feel temperature, but it rises once he is angry.
- His wings can turn to other colors based on his emotions, which is a good reason why he is so emotionally reserved.
- He loves mockingbirds (To Kill a Mockingbird, a bird of mimicry).
- He is Heaven’s Brightest, so looking at his actual face would probably kill a normal human.
- Gabriel can bend and create light (as seen by his weapons).
- He is the fastest angel, using deliberacy and forethought to best his opponents rather than raw speed.
- He has met Saint Nick and genuinely believes that is why Christmas exists, since Christ doesn’t exist in ULTRAKILL.
- His wings are light, so they can change from different wing types. They can also sharpen into tiny blades when he feels threatened.
